Ingredients

  • 6 garlic cloves, minced
  • ¼ cup lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 teaspoons oregano
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 2 – 3 individual chipotle peppers from a can of Chipotle peppers in adobo sauce
  • 2 tablespoons of the adobo sauce from a can of chipotles in adobo
  • 2 to 3 pounds Market Day Pulled Pork (fully cooked already)
  • ¼ cup orange juice (about 1 orange)
  • 1 cup chicken broth
  • Fresh cilantro, chopped to garnish

Chipotle Carnitas:

  • Place garlic, lime juice, oil, salt, black pepper, oregano, onion powder, cumin, peppers, orange juice and chopped or minced peppers adobo sauce in a small bowl and whisk to a paste texture. Mix with your pulled pork place in a slow cooker for 4 hours low heat or until it reaches a 145ºF degrees..
     
  • Remove pork from slow cooker and shred the meat using two forks. Taste and adjust seasoning if needed.
     
  • Pre-heat oven to broil. Line one baking sheet with foil and spray with olive oil.
     
  • Place carnitas onto a baking sheet with a cup or so of the juices and broil until most pork looks golden, crisp, and crusted, about 4 minutes. Remove from oven.
     
    Serve as an entree dish with subside-up eggs, or as a taco with scrambled eggs...put added chipotle sauce and sliced jalapeños for a bit more dash!
